We have tried those options in storage for Harvest & Products and they show different screens, so they are working correctly for us.

Have you tried to scroll down the pages for them and see if they show different for you?

I just tried the Alphabetically and Stored amount options for Seasonal Farm pass in storage and it is working correctly at least for me.

If you only have 1 item per decoration stored then it is not easy to see the difference between the two options.

For example I have 2 Split Elephant leaves so when I order by Alphabetically it is listed after the Sphinx, but if I order by Stored Amount they are listed at the bottom of the list as I have 2 of them and not only 1.

I don't see that. They are in stored amounts from lowest to highest. Maybe they look alphabetical just because the lowest items happen to be in alphabetical order. When you have it in stored amount look at the numbers for how many you have in storage and see if they are not lowest to highest amounts.

When selling product from the market, the default was to have every thing selected and you had to de-select those items you wanted to save Now, on my farm anyway, all selection squares are blank and you have to select all that you wish to sell. This is onerous for those who don't sell anything from one release to another. My case in point, I had 92 B in product to sell. Selecting all products one by one is an impossible task given that every neighbor's facility you work keeps adding to the total. Is this a new design change, or do I have a configuration problem?
