I moved your post from Suggestions to Help & Support about Cargo Ships to be able to answer you.

Ships have 7 days in total to be back home, but that doesnt mean they will use all those days to be back.

My ships usually are back in 2 days, so when I get that kind of seasonal goal, I can unload that ship and send it off again.
